One Week Check-In
I'm taking stock after one week on our vegetarian journey. Although the purpose was not solely for weight loss, I am quite surprised that I've lost 5 pounds in that week. It doesn't feel as if I've been doing much differently, but part of it is probably just that "re-dedication" mentality and a sharper focus. I would have to say that I feel a bit "lighter" both physically and mentally. I'm also enjoying finding new recipes and trying new foods - tofu for one!
I just finished assembling a spinach lasagna which is in the refrigerator waiting to be baked for dinner. The recipe did not call for spinach, but I decided to live dangerously ... hahaha.
It's cold in Minnesota - with snow expected the next few days. It's times like this that I am SO thankful for my treadmill. Anxious to see what the next week brings.

Feeling good!
It's a brilliantly beautiful day today and we both feel good. I asked Mr. Butler if not eating meat so far this month had been a problem for him and he said not at all, however both of us commented that we'd seen salads with chicken breast slices on them yesterday. Just something we noticed... Last night we had stir-fried tofu and veggies at our little Thai restaurant and I said I actually think I like tofu better than chicken on my Evil Jungle Princess!
Doing a little tidying up around the house today getting ready for the annual big Donahugh/Johnson visit. Last year they couldn't make it because of Phil's cancer so the whole thing feels special.

Losing it
Mr. Butler announced that he has lost 4 pounds since Saturday. What the heck? I will weigh in on Saturday but I doubt if I'll see those kinds of results. We had dinner at a nice restaurant last night to celebrate our friend's retirement. Although we didn't see anything meat-free on the menu, the chef offered to prepare a vegetarian entree for us -- 3 tiny samples of things: caprese salad, eggplant/potato mixture, and a spicy gnocchi with capers and peppers. Delicious!

Jeans you sleep in

After discovering that there are 14 grams of protein in my little container of Greek yogurt, I decided I will definitely be able to have enough protein. As with most things like this, it's a little planning and you all know that's not something I enjoy. We're having a broccoli and cheese souffle tonight with a side of broccoli.

Panic
It's 9:22 on a Sunday night and I'm having a little panic because I'm wondering what we're going to eat this week. Freaky. I saw this on foodtv over the weekend and it looked really delicious so that'll be tomorrow night. We've got soup in the freezer for lunches and I'm thinking there'll be some spinach lasagna on Tuesday night. This is too much meal planning for my seat-of-the-pants.
Mr. Butler's flight was fine and I think it satisfied his lust for flight -- today, anyway. It was very cold (relatively, I know) in the air.
Southwestern Avocado and Black Bean Salad

Ingredients

4 servings
1/2 cup freshly chopped cilantro leaves
1/4 cup extra-virgin olive oil
2 tablespoons freshly squeezed lime juice
2 or 3 dashes hot sauce (recommended: Tabasco)
4 cups chopped romaine lettuce 2 avocados, peeled and diced
2 cups fresh or frozen corn kernels, thawed and drained
2 (15-ounce) cans black beans, rinsed and drained
1 cup chopped cherry tomatoes
About 3/4 cup (3-ounces) grated pepper jack cheese
Kosher salt and freshly ground black pepper
Directions
In a small bowl, whisk together the cilantro, oil, lime juice and hot sauce.
In a large serving bowl, add the lettuce, avocado, corn, beans, tomatoes, and cheese. Add the dressing and toss well. Season with salt and pepper, to taste, and serve.

Look Look
Mr. Butler takes off in a little Cessna 172 at 11 a.m. MST so keep your eyes on the skies. He's very excited but ready with earphones, maps and radios -- all of which he probably doesn't need.

We'd walked to the country club for lunch and not one thing on the menu was meat/fish/poultry-less. We don't go there often but it was surprising there were no choices without saying "could you take the meat off? Last night, we were invited over to a little dinner party where we knew the host was serving turkey and ham but she knew of our experiment. The meat was served cold with buns for sandwiches and she had many salads so it was easy to skip the meat. Butler was called into the kitchen and asked if he wanted to take a little meat home with him and he said no, he wanted to do this, too. So far, so good! We both agreed that it helped the smells of meat roasting had already escaped the house and, after all, it IS only the beginning of day 2.

Hooray Hooray, no meat today!
And so begins our challenge to go one month without meat, fish or poultry. Really, I don't think it will be hard to do but hey, it's just day one and it's only been 4 hours since I've been up. I remembered our plan this morning when Mr. Butler made his traditional waffles for NY Day breakfast -- WAIT, no bacon!
It's a cold day here in the desert, just 29 degrees last night. Pray for our plants, especially those ridiculously expensive ficus trees. We lost two huge trees a few years ago with a hard frost and we're hoping that doesn't happen again. Mr. Butler insisted our window coverings be off the window to entice the warmth from the house to escape to the trees close to the house. I'm not sure that scheme will work but we'll try.
