I'm taking stock after one week on our vegetarian journey. Although the purpose was not solely for weight loss, I am quite surprised that I've lost 5 pounds in that week. It doesn't feel as if I've been doing much differently, but part of it is probably just that "re-dedication" mentality and a sharper focus. I would have to say that I feel a bit "lighter" both physically and mentally. I'm also enjoying finding new recipes and trying new foods - tofu for one!
I just finished assembling a spinach lasagna which is in the refrigerator waiting to be baked for dinner. The recipe did not call for spinach, but I decided to live dangerously ... hahaha.
It's cold in Minnesota - with snow expected the next few days. It's times like this that I am SO thankful for my treadmill. Anxious to see what the next week brings.
Holy smokes!! You lost 5 pounds since last Tuesday??? I think I lost one but I should have lost more since I was so diligent. Sheesh. I have 9 more pounds to go and you only have 3. I think i'll go have some celery.
